Easy Cream Biscuits (but actually scones) - Kelsey

This cookbook must have me motivated because I can't remember the last time I baked something on a Saturday morning.

There are two base biscuit recipes with some variations (I love when cookbooks do this). One is classic buttermilk biscuits and then this one, cream biscuits. They perhaps are not as flaky but they are very easy. 

I wanted easy and also cream biscuits just sounds so good. But then I had the idea of making strawberry shortcakes with them since the strawberries at the grocery store smelled good. So I made the cream scone variation. 

Started with dry ingredients. The recipe says 10 oz of flour (2 cups). Because I was curious and I have a kitchen scale I decided to measure how different these two were. The 10 ounces ended up being about 1 3/4 cup of flour. 

The only thing that makes them scones is 3 tablespoons of sugar added to the dry ingredients. 

Then you add a little bit of butter and a lot of cream. In the bowl it seemed too dry. Once I turned it out it seemed too wet. It was fine.

I kneaded a little bit. It didn't take much, it came together very quickly. 

When I make biscuits I usually roll them out into a square and then just cut square biscuits. I like how they look and you don't have to keep rolling out the excess dough. 

I had decided if I could find this specific cup that I would cut them out. 

This cup is probably older than I am and for my entire life has been in a separate cabinet to be used exclusively as a biscuit cutter. Growing up my mom made chicken a la king fairly regularly and that involved homemade biscuits. Always cut with this cup. I have a weird bit of nostalgia for this cup. 

The recipe said it should make 8 biscuits. I got 10 by hand shaping the last two.

These were truly so easy! And the quality of the final product makes them well worth the effort. I could see myself making both the scone and the biscuit versions regularly. They are tender and buttery from the butter brushed on top. My dad gave them a 10/10 out of the oven. 

For dessert, I made one into strawberry shortcake.

One time in 2020, I decided to hand whisk whipped cream. It wasn't whipping so I pulled out the hand mixer. It never whipped and I am haunted by this experience. Every time I make whipped cream I feel like it won't work. But it did. And it's was all delicious. 

I recommend these cream scones.
