Cheesy Broccoli Casserole - Mariam

It is Memorial Day weekend and it has been raining, gray, a little sad. Which is how I ended up making Kenji’s cheesy broccoli casserole. I wanted something quick and cozy.



I scaled the recipe down by about half  and I substituted dried parsley for fresh because Kenji loves parsley but also it’s impossible to use a whole bunch of parsley. I don’t know why they sell it in that quantity.  The dried parsley was fine although fresh is probably better. I actually had ground mustard which is fantastic because I would have put in any kind to substitute...hot dog kind, Chinese take out packets, whole grain, honey mustard. I didn't have any Frank's Hot Sauce either so it was Taco Bell Fire sauce packets. I have tons of these, if anyone ever needs some. 

Everything went mostly according to plan. The sauce came together well enough, although my cheese got a little grainy somewhere along the way. I actually think it might have been when it was in the oven. It still tasted good though. 



The breadcrumb topping, was great and I wish I’d made more of it. I think I’d spice it up a little more probably with just more black pepper. 



Really, this dish is basically mac and cheese. The broccoli takes the place of the pasta surprisingly well.

I wouldn’t say this recipe changed my life, but it made the kitchen smell good and I had two servings.
