Kenji puts two variations of potato hash in his book (peppers + onions, and corned beef) but has a huge section about how hash is about using what's leftover in your fridge.
I don't love peppers (and didn't have any) and definitely didn't have corned beef so I went with the spirit of the book and grabbed stuff from my fridge.
I found a pack of bacon that is very close to the use by date. I grabbed an onion and the leftover broccoli from last week's roasted broccoli recipe.
I started with peeling and cubing the potatoes.
Then like Mariam's last potato recipe you have to cover with a paper towel and microwave them. I did 5 minutes. I think it was perfect.
While the potatoes were in the microwave I got the bacon started. I'm a huge fan of bacon cooked in the oven but I wasn't doing enough to justify the hassle so I did stovetop.
I cut the onion while this was cooking.
There was enough bacon grease in the pan that I just didn't add any oil and used that for the potatoes.
Stir occasionally for 5 minutes.
At this point I realized it was going so well. I love microwaving the potatoes first because they take so long from raw on the stove and they never look good (at least when I do it). There was a tiny bit of sticking but it was not a problem.
Add in the onion.
Cook for 4 minutes. Add in Frank's Red Hot. I wanted to use Cholula but I couldn't find it so I need to get more stat. But Frank's worked. (Cholula with eggs is soooooo good.)
I realized I forgot to add the broccoli so I quickly added that.
It was in this moment that I began questioning the broccoli. Too late lol.
Crack some eggs in there and throw it in the oven for a few minutes.
And it's done! I crumbled the bacon on top and served it.
I ate it with ketchup and more Frank's. The vinegaryness of the Frank's was great! I used that more than the ketchup.
The broccoli was fine. If I had some leftover again then I would throw it in but I'm not going out of my way to add it.
I think hash has always been a bit intimidating to me just because of the raw potato thing. The microwave trick makes that not a problem at all and also makes it quick and easy! I'm already thinking about what other kinds of hash I can make.
