Eggs Benedict - Missy

I think it’s probably because eggs are in the beginning of the book but here we are back on our egg trip. 

This morning I made Eggs Benedict for my mom and my husband and my son. 

Yesterday’s fried egg seems to have put someone into an egg mood. When I opened my nice csa eggs this morning there were only 2 left. Ha!

I had to go to the store anyway. 

Before starting the eggs I needed to make the Foolproof Hollandaise sauce. 

This was an easier to hit temp requirement than yesterdays fry up.

I melted 2 sticks of butter at between 180-190 degrees and poured that into my egg/lemon/hot water jar.

Then back to the egg straining. 


Eggs in hot water with some rotation and that’s it. 


I will say his approximately 4 minutes in the book was way too long 

I got the veggie bacon nicely done and had more than enough Hollandaise but on my next batch I dropped the time down to two minutes.  


 This is jammy at just under 4 minutes. 


This is runny at just over 2. 



I loved the cayenne pepper that kept showing up in these recipes. 
The eggs were a hit and I got asked to make more.
