Lemon Ricotta Pancakes - Kelsey

The main reason I made the ricotta was to prepare for these pancakes. Two friends (Emily and Sarah) and I were having an Uncharted games playthrough and wanted to make them in the morning. So I prepped the ricotta.

He has a dry mixture base that he uses for his pancake recipes. I had meant to prep that too but did not have time. So we did it in real time. I've grown up with my mom making pancakes from scratch so when I'm home I want to compare recipes.

Anyways, we start with mixing the ricotta, buttermilk (we did milk with lemon juice), eggs, melted butter, and vanilla.

Emily insisted we use her sifter.

One cup of flour, some baking powder and soda, salt, and 1/2 tablespoon of sugar. And some lemon zest.

This picture was accompanied with me yelling "don't overmix!!!!" at Sarah.

We did a little test pancake. 

So fluffy!

We made two more before we tasted this test one and decided to add some lemon juice to the batter. 

It was easy and straightforward from there.

They were delicious. The ricotta made them so moist (sorry). They were not sweet at all but once you add some syrup they were soooo good. I would add lemon juice on top or maybe some lemon glaze. 

Emily said she thinks this is her favorite pancake recipe now. We had some blackberries on the side and those went amazing with it. Sarah had the idea of blackberry syrup!

So good! I do think I will be making these again.
