Anyone that has spent any amount of time with me probably knows that I hate penne. I think it's the worst pasta shape because I think it doesn't cook right. The inside is undercooked and the outside is overcooked. Get outta here.
So obviously I did not choose penne for penne alla vodka.
I chose these because they were cute.
On to the cooking. Olive oil and butter.
Saute an onion. I definitely burned my hand because I threw the onion in a bit carelessly and the oil splashed.
Then you add in garlic, oregano, and red pepper flakes. Cook for a minute. Then a big can of whole peeled tomatoes. I bought nice-ish ones.
Now this next step you are definitely not supposed to do over the pot with your hand half inside it. Especially after just burning your hand with hot oil. But I did because I didn't want to dirty a bowl. But you crush them by hand. This is before.
This is after.
Then you let it simmer for 30 minutes. About 20 minutes in a put the pot of water on to start boiling.
After 30 minutes you are supposed to add the tomatoes to a blender. I used a stick blender. First add the vodka.
Then cream.
Then blend.
Back on the stove so the alcohol can simmer off. Oh at this point you are supposed to add in raw chicken? I only like chicken with tomato sauce in specific instances and I didn't feel like this was one of them. And I didn't love the idea of adding it raw to the sauce so I did not.
Oh guess what! I saved the pasta water!
Drain the pasta, add the sauce to the pasta, add some pasta water. You know the drill.
Yum! I don't know if I've ever had homemade vodka sauce? I've definitely had jarred which I'm convinced is just creamy tomato sauce. Maybe I've had it from a restaurant but I'm not really sure. It was delicious. The tang from the vodka is so nice and creamy tomato is better than not creamy tomato.
