I don't love American diner style omelettes but this one seems to be going more for French style which I have never had but I do think I would enjoy.
You start by mixing 3 whole eggs and one egg yolk with milk, salt, pepper, and fresh herbs. I had thyme for other recipes and grabbed some chives at the store.
Whisk it all together.
Let it sit for 15 minutes.
I feel like the color change was even more noticeable this time.
Then you cube up a tablespoon of butter and throw it into the eggs while you are melting half a tablespoon in the pan.
Pour the eggs in over low heat.
Then you stir constantly and slowly until a large portion of the eggs are set.
Flatten it all out, take it off the heat, and cover it. I used a plate as a lid.
Then you roll. This went about as well as expected. Very poorly.
I obviously knew this was going to taste good, especially with all that butter. But WOW this was amazing. I was going to joke that I'm certainly not going to be serving it to anyone if this is the presentation but I actually would serve this to anyone because it was so good.
