Mariam did not have a ton of luck with this recipe but I decided to have a try at it. I love potatoes so even if it was bad it would still be good.
Similar to the hash he has you microwave them to precook the potatoes a bit first.
I started with grating.
Pre-microwave. It was very wet so I microwaved them on the paper towel to try and help that a bit.
Post-microwave.
He said to use olive oil but I wanted something more neutral so I did canola.
Throw in the potatoes.
It was during the transfer from the plate to the pan that I realized 5 minutes was too long in the microwave if you're shredding the potatoes. Next time I will try 4 minutes but even that might be too long.
He says to shake and swirl as the first side cooks. With how gummy these already were they was no shaking and swirling to be had.
To flip it he has you transfer to a plate. Heat up some more oil. And with a second plate flip and then transfer.
This went well.
I may have added too much garlic salt.
Served with ketchup and Cholula. It was good. The inside was a bit gummy which I think less microwave time would help with. The crust though is so nice.
