Roasted Beet and Citrus Salad - Missy

 

This was my 3rd salad for the weekend. I wanted to do beets because we have anemia in the household and because we had beets from our last CSA haul. 

I’m not a huge fan of beets but I’ve learned to prepare them in ways that I tolerate well. 

And they are beautiful. 



Look at the color here. They have such depth and pattern and glow about them. Even though I don’t adore them as a dish, I do admire the heck out of them as a plant. 

I decided to air fry these instead of roasting in the oven because it is hot. I kept all the prep and ingredients in line though so I think we are still well within bounds. 


While watching the Monoco gp I peeled and supreme’ed the grapefruit and the orange. 
I’ve never done that before. It strikes me as wasteful but decadent. 


These too were beautiful. 
I know it’s a winter salad but it was all very fresh. 
My daughter is a fiend for pine nuts so I was worried I wouldn’t have any for the dressing. 
I found a pack in the back of the cabinet and was very pleased with myself for squirreling them away. 


This was a super well balanced salad. Verything fit just right 
It was tasty but I did add some goat cheese to myv2nd bowl because cheese. 
Good recipe. I learned how to do a new thing and now have 3 interesting salads in the fridge for the week.
