The plan this weekend was shrimp scampi, but my mom has had dental surgery and she asked me to wait until she can eat again. So I decided to make tomato sauce instead.
It is as easy as the name implies.
Ingredients:
Saute the onion in olive oil and butter till soft:
Add minced garlic and oregano (which I got fresh from my garden instead of dried):
Added it to the sauce and let it simmer to meld the flavors:
Over sphagetti:
I made enough for a couple of work week lunches too.
Tomato sauce is one of those things I like so much that I'm not picky about it. I don't care if it's out of a jar. When the internet was still new back when I was in high school, I found a recipe for some guy's Italian grandmother's pasta sauce. It had like 30 ingredients (bay leaf) and was actually just ok after all that. But this recipe is so easy that if I didn't have jarred sauce, I wouldn't hesitate to make this.
I'm...uhhhh...also not supposed to be eating tomatoes. I don't usually eat it in this quantity anymore which is a shame because tomatoes used to make up 70% of my vegetable source but I remembered a little why I can't eat tomatoes anymore. I won't say I regret it, but next tomato dish is going to have to wait a while.
