Roasted Broccoli with Garlic-Anchovy Bread Crumbs - Kelsey


Roasted broccoli is not my favorite way to have broccoli but I wanted something that was in the oven as I knew stove space would be limited. And I needed anchovies for the meatballs so I figured this was a good one to try.

I made the bread crumbs earlier in the day. First, I had to dry out the bread at 275F for 20 minutes. 

Then I had to make them into crumbs.

This immersion blender is getting a lot of use with this project.

Then you cook the garlic and the anchovies in butter.

Then add the bread crumbs until they are toasty!

I tasted them like this and oh man they were so good.

As for the broccoli, it's the exact same as the roasted Brussels. Heat up the pan in the 500F oven. Coat the broccoli in oil, salt, and pepper.

Throw it on the hot pan and cook for 10 minutes. Maybe shake it once.

When it is done add a squeeze of lemon juice.

Serve with bread crumbs. 

I loved them lemon! I should have added more bread crumbs. I feel certain that roasted broccoli is not my favorite. I would love to try the crumbs on asparagus next.
