I made this ambitious menu last night when I was kind of hungry, but I wasn't sure if I'd go through with it. Surprisingly, the sticky rösti didn't deter me.
Started off with some slicing and pounding. The slicing was fine. The pounding was...a creative endeavor. I don't have a meat tenderizer hammer so I was going to use the bottom of a cast iron skillet as he suggested. But I don't have the height or strength to successfully lift such a heavy pan and pound on the counter and I didn't want to pound on the kitchen tiles and crack them accidentally. So I took it into the garage. I didn't make any holes as he warned but I did accidentally split some of the meat.
Next was seasoning. It looked a little unseasoned to me with just salt and pepper so I added garlic powder.
Dredge in flour.
Pan fry. Ok still looking a little unseasoned to me, but I tasted it and I think it was really good. Salt makes up for a lot.
Lemon caper pan sauce next. Super easy and I like it for the fact that it cleans up my pan. Just saute some shallots, add butter, flour for thickener, then add broth and capers. Take off heat and add lemon juice. I skipped the parsley.
Hot buttered peas is exactly what it sounds like. Melt some butter, cook your peas, add salt and pepper.
I was going to make the micro-steamed asparagus but then saw that it's just microwaving with salt and pepper. I wanted more flavor so I went with the braised asparagus recipe from last time and it was just as good. I feel like I remember Missy saying they're weirdly lemony? Turns out, I've been skipping the lemon juice each time, HAHAHAHAHA. Didn't even see it in the list of ingredients. The problem is that I often read the recipe out of my kindle version and the font switches weirdly from large to small and has page breaks at weird spots and this is why it seems like I have reading problems.
Rice was not out of the book.
And that's the line up.
It was all good. The peas were the most basic. The pan sauce was fantastic. I think I just like sauces. The cutlets had the most impressive punch given the lack of aesthetic. My parents ate with gusto and it's almost all gone.
