"AND IN THE MORNING... I'M MAKING WAFFLES." -me, last night
I'm definitely a pancake girl. Growing up, my mom made homemade pancakes fairly frequently (always for dinner). The only time I got waffles was from hotel breakfasts. In college we would occasionally get late night waffles for dessert.
There was a period of time where my mom was making authentic Belgian waffles which are a different food and so incredible. That was a good time.
Okay sorry on to the recipe. It starts with the same dry mixture as the pancakes.
Then separate some eggs.
Also start preheating the waffle iron at some point.
Kenji said lower temp and Google said 350-365 for lower waffle temp range.
Now whip the egg whites to stiff peaks.
I briefly considered doing this by hand until my mom gave me a look of horror. I'm glad I did not do it by hand.
Then whisk the egg yolks and buttermilk together. I did not see when to add the vanilla in the recipe so I did it at this point.
Drizzle in melted butter.
Then add club soda.
I have to say I think we are using the term "fold in" very loosely in this recipe because folding one liquid into another is actually just mixing lol.
After folding in the club soda you fold this whole mixture into the dry ingredients. This is actually folding.
He said it should still be lumpy.
Now start cooking.
And cook for 10 minutes. When I saw the first batch I realized how flat this waffle iron is.
They turned out so thin. They were crispy but I feel like the iron didn't allow for them to have a fluffy inside.
The last few bites were the best because the syrup had soaked in a bit and they were a little soggy. And that's how I know I'm a pancake girl.
